Favorite Fall Soup

Pappa al Pomadoro soup

It may still be a bit warm outside for this but it's a great simple soup. It's called Pappa al Pomodora and it's from a fabulous restaurant in New york, I Sodi.

3 tbsp of a good quality olive oil                                                                                                                                       3 large, minced garlic cloves                                                                                                                                         1/3 of a cup of chopped fresh basil                                                                                                                                 2 tsp chopped fresh sage                                                                                                                                               1 1/2 lbs  peeled, seeded tomatoes, chopped                                                                                                                  3 slices day-old white peasant bread cut into 1/2 inch cubes                                                                                        3 cups water and basil leaves for garnish

Heat olive oil over medium heat, add garlic, basil and sage and saute for 2 mins, stir in tomatoes and bring to a boil. Reduce heat and simmer for 10 mins-stir frequently. Add bread and water and bring back to boil-reduce heat and begin to break up break with the back of a wooden spoon and let simmer for 5 mins. Season with salt and pepper, ladle into bowls, drizzle a little olive oil on top and garnish with basil leaves-yum!!

Thanks for sharing this recipe, Sheila. I know it's great. I am not a strict vegetarian, but I make something similar topped with grated Parmesean Cheese. It's really comfort food. I love your site. It's got something for everyone, even us "FOODIES." I've always enjoyed all of the senses that GOD gave us, but now have more time to devote to the things of GOD.

Wow this sounds good...and we have all these ingredients in our garden, except for the olive oil, of course. Can't wait to try it!
